Shawn Shepherd and Butch Monaghan met in 2010 after a mutual friend was insistent on introducing the two of them because she felt they had identical personalities. The two met and realized they were indeed cut from the same cloth and an instant friendship was formed.

Both Shawn and Butch were high volume bartenders in their 20s and 30s and have been in the restaurant industry their whole lives. In 2012, Butch approached Shawn about an opportunity that had come his way. With Shawn’s food knowledge and Butch’s liquor knowledge, they joined forces and began to consult for a group that had an extremely large building in Gainesville. After that, they realized they made a great team and decided to open Wahoo Seafood Grill together.

So now, seven years later, they had the opportunity to return to the same large building that started it all. They wanted to open a fun restaurant that provides high-quality delicious food and beverages at a price point that is affordable for everyone. Shawn and Butch chose name Dos Papas because they’re both dedicated fathers who love their children and have always focused on family first.

The building has seen it’s share of tenants in the past seven years, but Shawn and Butch believe that the street taco and tequila bar concept is perfect for the space. The full bar and fun atmosphere is representative of both Shawn and Butch’s personalities and they want everyone to come and enjoy themselves.
